So in my world, you simply and quickly drag the corn tortilla through the sauce and put it on your Comal. Will it be perfectly crunchy? No, it will not. Will it cook wonderfully, yes it will. For the dip and the fill and the cook, it’s very simple. Dip it, fill it, put it on your comal and flip again…end of a story.
so it may not be perfectly crunchy, but it will be. Otherwise you’re putting too much liquid on the tortilla. Soaking the tortilla in the liquid is a very quick thing. One side, two side in two seconds. You’re not soaking it. If your tortillas fall apart, they are old. Just like me.
I agree, using flour tortillas (in my house) I just quickly slide it through, 2 sides in 2 seconds, directly onto a hot griddle or skillet. I don't get it CRUNCHY, but it isn't falling apart.
But I am going to try it with the chile-infused oil and see if I can get the crunch I'm looking for...
