Not grilling, but still... I like his style, pretty concise (not 20-30 minute videos) and he seems to really break down the rationale for a lot of the techniques he uses. He also experiments with lots of various techniques and explains why he does/doesn't do certain things.
I haven't MADE this recipe yet - but I can guarantee you I am GOING to. These things look incredible, and I've been searching in an attempt to make the perfect green enchilada or tomatillo sauce for eons.
I definitely need to try this one - but I will be adding a jalapeno or three in there, for sure. And will likely be smoking the veggies to make the sauce. Maybe the chikkin as well. But hey, that's what it's all about, right? Taking techniques from multiple sources and adapting and adjusting them to make them your own!
