    Tasty Carnitas!

    Hello folks,
    Just sharing the makings of a meal we enjoyed. My son said he wanted Mexican for a meal I was preparing for my wife, son and his family. I made the trip upto North Gate Market in Vista and Ranchera marinated flap meat, some fresh chorizo and some fajita marinated chicken w/ veggies. Gilled them all over oak splits. Served w/ fresh corn tortillas, refried beans, Mexican rice, guac, pico, slasa, and crumbly cogito cheese. Great smokey oak char. Delicious meal.

              yes smelled and tasted great. All I can take credit for was fire because it was all pre marinated.
              That oak wood fire adds so much over charcoal.
              Will do that again soon.

                I think you can take plenty o’ credit for the perfect char and awesome color on all those proteins, none of which cook at the same speed or temp, of course

                    Wow. North Gate Market sounds like a great resource for tasty eats. Wise move to grill the whole batch Santa Maria style. Which Santa Maria setup did you purchase for your kettle? When you use it, are there a lot of sparks flying? Just curious.

                      Northgate is damn fine, big a$$ store! I usually get a bag full of the elephant ear pastries. I have not tried their marinated flap meat yet. I guess I should give it a try!!

                        I’m sorry, I forgot what brand it was. I got a clearance scratch and dent. I think it was only about $130. I’ve already gotten a lot of use out of it. No sparks but I suppose it has todo with the wood, hiw it’s lit and what the wind is like. It’s never been an issue for me.
                        I highly recommend it. Awesome for tri tip & roast vegetables.

                          jjdbike, I live on the side of a mountain in a forest and my smokers/grills are on the upper deck. So I am very mindful of errant sparks from any of my cooks. That's why, sadly, that I don't own a Karubeque C-60. That vendor warns of sparks.

                          But oh how I would love to have a Santa Maria grill and cook food directly over a wood fire with control provided by the Santa Maria setup.

                          I've looked at Gabby's setup for the 22" kettle. I may go with it one of these days when MCS rears its ugly head.

                        Sounds more like fajitas - carnitas is pork, slow cooked then usually deep fried for a nice crust.

                          Yes you’re correct.
                          wrong terminology.
                          I used the term carnitas, while I should have used carne & or barbacoa. Carne meaning meat. Barbacoa used loosely as a generic term for bbq, not specifically technique specific book or goat braised / grilled.
                          I do love pork carnitas, also carne asada!
