    Mom's weird tortillas

    As in a kid in rural Indiana back in the 70s, I had virtually no exposure to Mexican food or culture (except my dad would bring home great hot peppers from Mexican guys he worked with in the steel shop, but he didn't socialize with coworkers, so I never got to know them.)

    My mom used to make tacos with ground beef and seasoning from a packet - pretty standard. But the weirdest thing - though I didn't know it at the time, was the tortillas. I have no idea where she got the recipe. It was a corn batter with baking soda in it. She would pour it on a griddle and basically make a fluffy corn pancake. Never seen or heard anyone else make tortillas that way, but they were delicious. One of my brothers said he might have the handwritten recipe in one of her old cookbooks - but hasn't had a chance to look.

    Anybody else familiar with the corn-pancake-tortilla method?

    Or maybe somebody's gonna really blow my mind and tell me it's actually an authentic style from Mexico, but I've never seen anything like it.

    Interesting. I grew up with Mexican families and never experienced anything like that. It sounds pretty good, though.

          First thing I thought of was a hoecake. But I think I’m wrong. Looking forward to seeing what your brother might find.

            Hoecakes were in the regular rotation when I was a kid, and I loved 'em.

            Me too. Sounds pretty similar to the hoecakes my grandma used to make when I was a kid.

            And in case I didn't make it clear enough - my mom had never been to Mexico and the only Spanish word she knew was Uno - because of the card game. So I'm highly doubtful she discovered an obscure regional mexican variant. And she also was not a creative cook, so she absolutely got the idea from somebody, but I have no idea the source.

                I had some leftover naan from a lamb dish, so I used them as tortillas for street tacos. The fluffiness of them was really, really good with the taco filling!

                  Never heard of that method. My dad is from Michoacán and my mother’s parents were from San Luis Potosí. I’ve seen a few different ways of making them but not a pancake style batter. Would be curious to know. Almost sounds like a Spain kind of thing.

                    synodog I just had a Chardonnay out of San Luis Potosí. Central Mexico is really putting put some good juice!

                      BREAKING NEWS:
                      Affiliates stand by... My brother thinks he has the recipe and will send it to me "as soon as he gets a chance."

                      I tried to impress upon him that the most important niche of the culinary world is dying for this information, but apparently he has one of them there "jobs".

                      [Just as written by mom]

                      Tortillas

                      2 C. flour
                      1 C. cornmeal
                      1/2 tsp salt
                      2 eggs
                      2 3/4 C. water (more or less)

                      Combine with rotary beater until smooth. Spoon by 3 Tbsp onto ungreased griddle until edges are dry.

                      So I was wrong about the baking soda. The fluffiness is the eggs and the bubbling on a hot griddle. She had an old electric griddle that only had 2 temps - hi and lo, and I never saw the switch on lo.

                      I won't have time to try until the weekend, but I'll give it a go then.
