As in a kid in rural Indiana back in the 70s, I had virtually no exposure to Mexican food or culture (except my dad would bring home great hot peppers from Mexican guys he worked with in the steel shop, but he didn't socialize with coworkers, so I never got to know them.)
My mom used to make tacos with ground beef and seasoning from a packet - pretty standard. But the weirdest thing - though I didn't know it at the time, was the tortillas. I have no idea where she got the recipe. It was a corn batter with baking soda in it. She would pour it on a griddle and basically make a fluffy corn pancake. Never seen or heard anyone else make tortillas that way, but they were delicious. One of my brothers said he might have the handwritten recipe in one of her old cookbooks - but hasn't had a chance to look.
Anybody else familiar with the corn-pancake-tortilla method?
Or maybe somebody's gonna really blow my mind and tell me it's actually an authentic style from Mexico, but I've never seen anything like it.
