What do ya know about Mexican cheeses?

If you know as little as I did, this article may be of interest:

Melt them, crumble them, fry them... here are some of the most common Mexican cheeses you’ll find at the supermarket and how to use them.

Something I miss about my home town/area is the carnicerias where we'd get a lot of great Mexican and Latin American products like this.

Sadly I can't even find Queso Fresco in my neck of the woods. I'm going to bookmark the article so I can re-read next time I am travelling to a place where I can find Mexican Cheese.

Thanks Ron ... excellent article. We recently discovered Queso Cotija and it's awesome ... almost like a crumbly Mexican Parmigiana Reggiano. Fantastic on fish and shrimp tacos. With the article you posted, it looks like it might be time to expand our repertoire a bit more ...

I had cotija on my tacos last night. It is really interesting.
