cgrover60 's photo in the first post looks pretty medium rare to my eye. A later photo posted by someone else here looks more medium to me, mountainsmoker .
I sous vide steaks all the time, and can get them beautifully medium rare (130-135°) , sometimes using a flash chill (depending on the thickness of the steak) before a quick high heat searing in the 700-800° range. So after a couple of years of doing this I can pretty much nail medium-rare every time. In my kitchen, happily, sous vide delivers on steak night.
