    Sous Vide NY Strips

    Cooked a few strips Saturday for our dinner. Daughter is visiting from college so figured I'd fix something nice. She is not a big vegetable person so steaks and twice baked potatoes it was. Got some prime grade from Lowe's Foods. Hit them with S&P then put them in the water bath at 131 degrees for about 2.5 hours while I worked on the potatoes. Took them out, dried them off then seared on the Jumbo Joe with Royal Oak lump. Man that stuff burns nice and HOT. This is a pic she took of her plate before she devoured it. It was a great weekend to treat her with some good food.

    Nice. Bet you are happy to have a daughter who loves meat as much you do. That plate looks great.

            My younger son doesn't like steak with one exception - Sous Vide steak. He doesn't like the chewiness of steak but man they get tender cooked Sous Vide as your pics clearly show.

                Gorgeous! I SVed myself some strips the other day. Great minds. Definitely a nice way to nail the perfect doneness & tenderness.

                    I did some strips from a large striploin I got at Costco, and broke down into THICK steaks. Like you, 131 for maybe 3 hours due to thickness... Have to do maintenance on the gas grill, and it's too cold to reverse sear on the Grilla, so I busted out the cast iron and the avocado oil, and put a sear on four sides from fridge temp. Still cool in the center, but beautiful brown sear all over, especially the side I cut with a minimum of sawing.

                      Potkettleblack I did the hood as part of a complete kitchen tear out and replace, but it was some years ago (and I mean to the walls). I can tell you how much the new kitchen cost, but I don't remember the price of the range hood specifically. I DO remember that NONE of the appliances were cheap and the bill for them was breathtaking.
