I finally lucked in to a couple of tri-tips here on the east coast. Even though they're Choice they still were nice cuts with decent marbling.
After a dry-brine, they got some T-Bone's Secret Rub and went on the smoker at 225* for a little over an hour until the IT was 110*.
After their smoke sauna, off they went to the hot tub at 130* for 6 hours.
Next, after getting the Napoleon Gasser screamin' hot, in they went for a sear.
They turned out awesome. A great smoky, beefy flavor and super tender. These definitely will be on a regular rotation here at Hacienda T-Bone as long as I can keep finding great tri-tips.
