I’m sure it’s been done. I’m hoping not to reinvent the wheel so to speak.

            Well then ... enjoy: https://www.google.com/amp/s/skillet...1802761145/amp

            And it’s "doesn’t" ... not "don’t".

It never crossed my mind to bake bread in SV. But maybe it’s because we "bake" bread which implies an oven? I imagine you could cook bread to 210 in SV (vac sealed?????), but it’s just be a cooked dough ball without resemblance to a loaf of bread.

                interesting thought though!

It reads as trolling if he’s not serious. If he is serious, I’ve given a practical use, I’m done.

I’m serious. Why would you think I’m not?

1- Why do you NEED to SV bread? There is no need to SV anything unless all you have as a cook method is SV. The real question is does product X benefit from SV. Aside from proofing, what benefit does a sub 200 constant temp provide bread?

2- Enriched, yeasted dough. There ya go. Knock yerself out.
Precision cooking is a actually a great method for producing tender, moist yeasted breads like dinner rolls. The controlled temperature makes it impossible to overcook the bread, leading to delicious results every time. Yeasted breads aren't exactly quick to make, but they require very few ingredients and even less hands-on time. Plus, you can get out any of your work stress when kneading the dough! Pull out these sous vide dinner rolls for your next dinner party -- or even "bake" them up for the holidays.

i think a similar process would work for steamed buns. But the oven is faster and likely produces better results. I don’t understand the "need."

Look it’s not trolling. What’s next for SV? Baking is the last thing to conquer. Just sayin. If this is not a conversation worth having by all means delete the thread BUT I think SV has way more potential that meat and veggies. SV bread! That’s something.
