    I know it's not que, but here's a pic of some sous vide and then fried Nashville chicken I made today.

            It was pretty tasty, but not my final version. I'm trying different dredge and finishing sauce recipes to come up with a final version that is the same as the one I tried in Nashville. This particular version was just a hair too spicy and I didn't care for the brown sugar in the finishing sauce.

              I live in the Memphis area so I am not quite sure how they are cooking it up there in Nashville but we have Gus's Famous Fried Chicken around here. It is mildly spicy with what I consider to be just the right amount of heat without burning as it goes down, it leaves just a hint of heat after you eat it and is some of the best fried chicken I have ever had. If you ever have a chance try some of it I think you will be pleased.

                You know what, I have not had any of Gus's in a while so I might just have to go there one day this week to feed my fried chicken cravings that you stirred up with this post. Thanks I needed that!
