Sous Vide Bags for 185 degree cook?

    fzxdoc and Potkettleblack - I get that ziploc seams will fail over 158, but since I'm cooking sans vide when I go over 158, wouldn't I be ok? As long as the bags them selves don't melt, everything should be good at 185 no?

      No, Hugh --the seams of the ziploc bags can fail at higher temps, so if you've got your chicken submerged in the water, top of the bag open, and one of the side seams breaks, you're chicken will be soaked. Literally.

        AAAhhhh. I thought we were only talking about the joining seal at the top. In that case I'll check out Walmart for some Foodsaver bags. Thanks for the heads up.

        I did another cook just for fun tonight. Fresh chicken thighs for 1.5 hours at 185. Juicy enough. Pretty easy bone separation at the joints. Meat texture was a little too cooked. I will try it for an hour next time.

          I only use these for cooks over about 150F. I only pump the air out when I'm cooking something that wants to float, I usually don't seal them. They work pretty well and they are reusable.
