    @Clint Cantwell,that was a typo-it was actually 30 minutes in the ice water followed by 10 minutes in the freezer. The freezer was the only deviation from your post, just wanted to make sure. Worked like a charm!

      Awesome! Not sure if I mentioned it before but my wife thought the last steak I did this way was my best ever. And I've done A LOT of really great steaks!

    @Clint Cantwell you've made believer out of me. I've done sous vide for awhile, but never achieved these results with steak and/or pork chops. My hat's off to you sir!!
