As a followup, many folks have reported burst seams on the bacon packaging when done ChefSteps style. Better to repackage.

I've sous vide bacon a couple of times. The meat becomes a bit fragile after pan frying, breaking in every direction, not just with the grain. Not my first choice for a bacon sandwich, but on a burger works very well- the bacon bites through with each mouthful. Doesn't pull out in tough strips.
I DO NOT RECOMMEND using the bag from the supermarket. These plastics are not designed for long term heating. So I remove the bacon and vacuum reseal in a sous vide bag.
