    My New Anova Arrived

    I just got my second Anova immersion circulator, thanks to a Pit thread announcing a sale. It arrived yesterday. It is really nice - having wi-fi and bluetooth connectivity. My first one is a first generation one with no connectivity and the fixed pot clamp. The new adjustable clamp (goes up and down to accommodate shallower vessels) is a great feature. Also, the clamp is a part of a removeable ring which is snug around the body. Taking the ring off and placing it on top of a cooler you want to convert to a SV vessel makes it very easy to size and locate where to make the cut-out in the lid. I may be taking the older one to the vacation home in VA (at least that's what SHMBO things!) but I really like the idea of having 2 in one place so I can do animal protein and veg at the same time (or 2 different meats at different cooking temps).

    I got mine yesterday too! I also opted for the wifi version. Though, reading the reviews of the iPhone app it seems to need software fixing.

    I have some nice ribeyes ready to cook this weekend with it! For now I will probably just use it with a stock pot, but may end up getting a dedicated cooler and cut a hole in the top like you said. Especially if I want to do some big pieces like a big pastrami or something.

      I have 2 dedicated coolers - 1 is 36 qt which takes a ton of water to fill high enough for the Anova, but I find if I put very hot water in it to start, it gets up to heat and holds it perfectly well for days (literally). I also, recently, bought a 22 qt cooler from Walmart.

    Mine arrived yesterday, also! Haven't cooked with it yet but I did clamp it onto a large pot for a test drive. Setup was trivial (I have the Bluetooth + WiFi version also) and I have to admit that I like being able to monitor and control it from the iPhone app when out of Bluetooth range. It took about 10 minutes to heat 18 cups of water from 64 deg. to 131. Temp was rock solid and when compared to my Thermapen, the difference was zero! I think I'm going to like this new toy ... uh, tool ...

      You will absolutely love it MBMorgan. I am constantly trying to think of new things to cook with it. I have made Chinese Spare rib tips in Black Bean Sauce by SV-ing the ribs and peppers separately, making the sauce in the wok and adding the ribs and peppers right at the end to coat with sauce and heat up, then drizzle in some sesame oil et voilá!

        QUESTION: how does using the SV technique affect flavor? I feel like I'm adding a smokey flavor when I go low and slow with charcoal. I'm thinkin' that not a whole lot of smokey flavor comes from the SV technique.

          No smoke flavor comes from sous vide. But you can add smoky flavor either before or after sous vide. BBQ and sous vide are apples and oranges, but they can be complementary. Sous vide is another form of low and slow cooking. For instance, when I made sous vide pastrami, the process went as follows: brine the meat, rub, smoke, sous vide. The result was fantastic.

              Here you can see that on the Gen 1 the power cord is detachable and plugs into the fixed clamping structure. You can also see the power button located on the back of the "head".

              On the new version, the power cord is permanently attached as shown here. Also, there is no power button. As soon as you plug it in, it's on.

                Here's a screen shot of the Anova android app. You can see in the gray band at the top the set temp, the current reading temp and the time setting if any. At the bottom in the white band is where you tap to set the temp on the left, set the time on the right and start the device in the middle.

                This is the screen on the new one. the blue arcs to the right of the set temp is the wifi indicator. It will flash until it connects then turns steady. If I don't want to use the app, or if I don't have connectivity, I can change the set temp with the blue-ish thing partially visible under the rim of the face. That is a thumb wheel that adjusts the set temp. I can start it by touching the red "button" on the touch screen.
