Was out this weekend and ended up picking up a controller. going to test it this weekend. Any suggestions on Healthier recipes i can try out this weekend? maybe a fish or something?

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

Fish sounds good. I just bought 2 big Ahi tuna steaks I'm going to sous vide tonight or tomorrow. I'll preheat the hot tub to 132° and cook them for about 20 minutes and then sear them a little just to add some color & crust. I'll make a Beurre blanc sauce to top it with and I'll serve it over a lemon & asparagus risotto.
How to make the Beurre Blanc sauce. It's easy and goes really well with fish.

nice. I have been looking online for recipes. maybe a salmon in the future for me. OR miso cod! saw a recipe for that.

Salmon I smoke with alder wood chunks and I top it with a hollandaise sauce. I serve that dish with fettuccine Alfredo and asparagus done sous vide style.
