Found some nice looking pork chops in the butcher's case yesterday and decided they were the answer to "what's for dinner".

I went with Byron's Butt rub with ginger, rosemary, and allspice mixed in for the rub.
Seasoned and ready to vacuum seal
Into the Foodsaver bag
and then it's time to take a bath.

The pork chops spent about 4 hours in the hot tub and came out very juicy and tender.

Patted dry and coated with ghee

Time to get the Performer with Slow 'N Sear fired up!
Here's a recent upgrade I made to the Performer
Pork Chops on for the sear while the bacon cheese stuffed mushrooms get happy on the indirect side
