    Lordy be! Partial differential equations, integration, and heat transfer. That's one darned technical source for sous vide! Thanks for posting it.

        I especially liked it because it listed various temps crossed with various thicknesses of various meats. Pretty much give you a guideline on any hunk you wanted to sous vide.
