          Diced tomatoes, lime juice, chocolate, etc...being brought to a low simmer.... 2nd pic

            Three hours in. Gotta ultra low simmer going. Aiming for 5-6 hours. Jalapeños, cheese, bacon, sour cream for optional toppings along with saltine crackers for moi and fritos for wife and kiddees. Carrots will be added 15-30 minutes before it is removed from heat.

                I often, not always, simmer mine a very long time, indeed...
                I do, indeed, Sir, sample, to assure Quality Control.
                Usually I'm makin' 2-5 gallons`ish...
