Meat Church Overth The Top Chili: anyone?

    Hello folks,

I am amped up about doing a chili cook this Saturday. I always use a smoked meat and don't plan on changing that. The challenge of that is, it stretches the cool out to two days. Smoke a brisket, short ribs, chuckies Saturday, and cook the chili all day Sunday. Takes uptime whole weekend.

I'm considering a pivot. I've been a Matt Pitman and Meat Church fan for a long time. I know it's gone viral and a social media trend, but it has me thinking. I wonder how close to the flavor of a long-cook, expensive, two day smoked prime meat chili, would a smoked, meat church chili seasoning, over the top chili be?

I want to goto church this Sunday and need to spend a good portion of day working in my garage, AND I want some chili! I'm gonna give it a shot. I'll follow his recipe and let you know how it turns out.

    Cheers!
    JD

P.S., This is gonna be hard for me. It feels like cheating, sacrilege, and wrong... using ground beef and commercial premade seasoning. Feels like selling out. It was kind of embarrassing even posting this. I know... I need to chill out and not take myself so seriously.

I doubt it will be 100% as good, but only one way to find out... I've had OTT chili and it was amazing for about 5 or 6 bites, then it got old real quick, it was just too much. Granted, YMMV based on how smokey the meat is allowed to get. I have not attempted it again since.

      Thanks,

Can you please unpack what you mean by "too much"? Do you mean it is too smokey?

Yes, too smokey *for me and how it was made that particular time*. Incredible at first, but it just got to be too smokey by the time the bowl was finished. I didn't want any more tomorrow.

        Hey #Huskee,
        Thanks for the clarification.
For ease and convenience, I am planning on using my pellet cooker with out adding extra smoke so I don't see overstocking being a concern.
        Cheers!

I'm also a big fan of Meat Church products. I have never used his chili seasoning. He is in the business of selling bulk seasoning to the food industry and to us retail customers so if it wasn't good and selling, why would he keep it as dead inventory. Also, he states if you order from his website, he has the freshest products possible.

      As always, YMMV.

BTW, this week is the MeatUp in Arlington, Texas and we are planning a trip to the newly expanded Meat Church store in Waxahachie, TX.

        Nice,
Thanks. I'd love to visit that store!

We tried Matt's Texas Chili seasoning a few years ago, and while I like Matt's seasonings a lot, this one had too much heat. My wife greatly disliked it, I found it tolerable but not something I wanted again.

Good to know. While I generally can not get enough heat, especially from chilis, my wife is sensitive to heat. Thanks for sharing!

I did this once and it was okay. For me -- and this might be the same for you -- I am not a huge fan of ground beef chili unless it is very thick. (Like think Wolf Brand.) The chorizo and short rib chili I did Sunday worked for me as after four hours of simmering the chorizo effectively disintegrated.

I'm a huge fan of Matt's products and next time I do my Texas Red, I do plan on using his chili seasoning. His stuff is legit. I go through more Holy Cow than should be legal. It's my AP seasoning. (I use that stuff on everything except chicken and seafood.) Love Holy Voodoo on wings. I don't do too much with his sweeter seasonings as that isn't a flavor profile I prefer.

One thing I think he does very well with his seasonings is he has primary flavors and then some secondary, background flavors. I want to give his lemon pepper and Jalpeño Blanco a try soon.

I'm keeping my eye out for the jalapeno blanco as well.

I am being pulled back to the short rib & marrow chili simply because its was so good. On the other hand, I'm shying any from all of that work.

I love garlic and jalapeño blanco!

      Cheers!

I have a couple of bags of MC chili seasoning. Used it last time I made chili with cubed chuck. I don’t use it every time though, mostly when I want to make a quick batch of chili.

          Thanks @jayjordan,
What’s your assessment and feedback on the flavor profile?

As others noted it has a bit of heat. Overall it’s a pretty good seasoning for when you don’t have the time or energy to put together your own.

I’m considering requesting my local meat counter to do a custom extra course grind of brisket & rib meat.

It’ll have the connective tissue and deep beefy flavor without having to babysit it on the smoker all day.

I like Meat Church and Matt Pittman - but about beans in chili, he's made numerous comments about how you sit when you pee or that kind of thing. That's ok, he's entitled to his opinion. I thought it was funny, though, when he had one of his good friends and idols on (an old singer, I can't remember his name) and he asked him about beans in his chili, the old guy said he was a fan of beans in his chili. What did Matt say? Crickets.... of course. lol He didn't want to offend his guest, but I found it pretty funny.

Anyways... Team Beans In Chili for me.

<edit> I went back and found the video - it was Robert Earl Keen...

It's right at the 10 minute mark, and Matt asks him straight out and Robert says, "Beans." 100%. No ambiguity to it. And Matt was just like, "Okay, okay." Nothing. lol

I dunno, I just found it funny, considering his previous comments in chili videos about beans and how it reflected on the man who chose them.

If ya'll meet Matt at the shop when you are there this weekend, I BEG you to ask him why he didn't call out Robert Earl Keen about preferring beans in chili! PLEASE! lol

          Anyways, carry on....

          Agreed,
          Pretty funny.

I used his recipe last year for my first chili cook-off, but I smoked a tri-tip the day before and added that as an additional meat component. We won the cook-off with this and I'm retiring as an undefeated champion.

This is the way! My son did that in karate - went to ONE tournament, won his division and never went back to compete again. lol Surprisingly, he DID stay in karate and eventually ended up a black belt, but never wanted to compete again.

I am a big Meat Church fan too. The Gospel is my go to, along with Holy Voodoo, Blanco and Hail Mary, despite the fact that the Hail Mary was made for the Cowboys. I haven't tried the chili seasoning though; I probably won't as I prefer using my own. Of course, since I never write it down, it is always different.

I went to the old store in Waxahachie back in the spring and I bought far too much. I look forward to visiting the new location on my next TX trip. Hopefully I will be able to exercise some restraint
