I modified some of the smoked chuck roast and smoked vegitables chili for a work potluck. I used 18 cups, 128 oz of my chili. My wife and the neighbors say it has too much meat, not enough beans. My neighbor says there's not enough heat.

I added 2 cans of "spicy black beans, two 1/2 cups of my homemade beef stock, 4 diced chipotles in adobo, and added chipotle and adobo powder, blended chili power puzzle, and coco powder. It was a big hit. To me it wasn't hot enough and the chipotle in adobo added too much vinegar.

Next time I thaw and reheat it, I'll smoke some jalapeños, dice and add them to the chili. I did like the addition of the added chipotle and adobe, blended American chili powder, and coco.

So, here is some last minute advice I would give, and I have won one, but I’ve lost a few too, but most importantly, the events or gathering by you caring enough to attend always win!

At the end of the day, the win is an ego thing, not the important thing, Make a chili you enjoy eating and enjoy sharing it. Be sure try others on the same day and thank them for sharing theirs too, you may even taste things that you would like to figure out for your own in the future. Again your church wins, so go have fun, do you, learn from it and adapt from there.

But here is the trick to wining any of these… have the most fun, then you win them all!
