January Soup month, Looking for suggestion.

    Here are two soups I've made recently and both are dead simple to make and delicious. Apparently I really like soups made with thai red curry. I made the curried butternut squash soup for thanksgiving to rave reviews (made it vegetarian and without the croutons for my sister in law who is on a restricted diet - its better with chicken stock and the croutons but still delicious without it)

    This curried squash soup is made with spicy, fragrant Thai red curry paste. Served with red curry butter croutons, it's the perfect meal for cold weather.


    This coconut curry noodle soup is an incredibly delicious, restaurant-quality meal that takes only 15 minutes from start to finish. Make this soup at home!

        Very similar to the noodle soup I posted right above but for the lack of coconut milk. Will have to try this version

        shify Indeed it is. I like the woks of life but have not tried their Thai curry soup. You can't go wrong adding coconut milk. When that comes in I feel like you're crossing over closer to Tom Kha Gai territory.

      Attjack Just hit on something....this would be a wonderful time to make stock, if you've never done it before. (I haven't!) But after getting my chest freezer in July, I've been stocking up -- pun fully intended -- on chicken wing pieces and other stuff.

      I could make a stock in December in prep for the soup in January!

      This is going to be a lot of fun, yall!

        Tip for stashing stock! If you have silicone cupcake "pans" they are perfect to freeze a one cup measure for freezing any stock. After the juice is frozen, dump and store in a zipper bag. So easy to use! Homemade stock makes the best soup even better.

          That's a good tip. When I make stock in my 6 quart instant pot I end up with 4 quarts of stock. I divide that into 2 large zip lock bags and lay them flat on a sheet pan to freeze. I do this on a special low profile shelf I installed in the freezer. Once frozen I store them vertically in the freezer as if they were books on a shelf.

          Similar to Attjack i portion 2 cups in quart freezer bags and lay flat. The door in my upright freezer looks like a filing cabinet. 🤣

          The best way around this conundrum is to just call it MN wild rice soup and enjoy both styles!

            Wild rice is not actually rice...

            Just thought I'd stir the pot, so to speak...

            Tip:
            Anytime you use canned veggies, save the fluid and freeze it for when you make stock.

              I was confused. Now I am "googled" knowledge.

              Allon you are correct.
              They are two different types of grass. So they may be cousins but not the same.
              Interestingly corn is a grass also.
