    Looking for a Wisconsin Cheddar Soup Recipe

    Years ago back in high school the cafeteria used to serve Wisconsin cheddar soup. There are a few recipes that I found using google that look promising but I thought I'd ask the members here for a recipe. From what I remember it was white rather than yellow, smooth (no veggie chunks), and it had small ham pieces in it - they were very small bits. I found some at Sam's Club once in the late 1990s but they haven't carried it since. Anyone got a recipe?

    The closest I've made in years was the cheddar soup recipe from J.L. Hudson's Department Store in Detroit, it is really good but not the same.

    I’ve lived in Wisconsin most of my life and I have never had any that was anything to remember. I’ll be interested in what comes up here. I’m sure there are some good recipes out there. I have just never had any.

      It was just a good soup, nothing that would knock your socks off. I'm sure the school got it in gallon cans from a food service supply house. It is more of a comfort food thing, the J.L Hudson's soup was good but the cheese was stronger in it.

    I've had some that was excellent. The Memorial Union at the UW was famous for it. Unfortunately, I don't have a recipe. I've read that sodium citrate will keep cheese soups and sauces smooth. Some recipes involve beer, iirc.

      My mother made a cheddar soup, it was good and or bad depending on the cheese.
      Some cheddars just don't work in it, it was very simple and rather bland depending on what was in the pantry that day.
      Hers was cooked pureed potatoes along with cooked pureed veggies and chicken stock for the most part with minimal spices
      If there was no cheese, in went beef chicken or pork, it was another simple east coast peasant food.

        I've made this one twice. Once with the beer, and once replacing the beer with additional chicken stock.I preferred the non-beer version. It's a good soup, but not one that will win any awards. Next time I make it, I'll add a splash of cream to it during the blending stage to see if that kicks it up a notch.
