I smoked nuts on my BGE the other day. It's a great snack that turns out really good. And you can do many variations on flavor. I did one batch of plain nuts (salt only), and one batch caramelized nuts.

I didn't soak them, instead I sprayed them liberally with water. I then salted them, and drizzled honey on one half. I ran my BGE on low 'n slow (225° F), and used beech wood chunks for flavor. I smoked them for 30 minutes, using a frog mat so they don't fall throught. Brought them in, cooled off. This is a great snack. I do it before I put a PP or a brisket on.
