I decided to freestyle Reuben Dip to celebrate Friday. I did not follow a recipe and I didn't write anything down but the basic ingredients were:
1 brick of Philly cream cheese
1 cup of chunky thousand island dressing
About 1/2 cup of mayo
Bunch of diced chives for some color
About 1 pound of pastrami chopped (I like pastrami more than corned beef, apologies to any purists)
9 ounces of shredded Swiss cheese, 6 for the mix and 3 for the top.
About 6 ounces of drained and paper towel dried sauerkraut.
Bake at 375 for 20-30 minutes and enjoy with some rye rounds or your favorite cracker.
Best of all, it's low carb!!! I'll post a final picture after it's done baking.
