We were in Waco,TX yesterday and stopped by BJ’s Brewhouse for lunch. Their salsa was maybe the best I’ve ever tasted. It has a deep rich smokey flavor. I think some of that flavor would come from fire roasted tomatoes. Anyway it has sent me off on a mission to make a rich smokey tomato salsa at home. I’m headed to the store in a bit to get the stuff for my first try. Do you have any ideas?

Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
Often smoky salsas use chipotles. Those can range in heat the same as any jalapeño, from mild to pretty potent. And same with smokiness, some are touched and others are like smoldering wood.

We ate Tex-Mex at La Hacienda Ranch in Colleyville, TX last night and they served a brown smoky salsa that was served warm /heated along with a normal red salsa. I've never had brown before, and it was very good.Last edited by Purc; June 7, 2025, 06:58 PM.

This lady has an entire section on Mexican sauces and salsas. I've used this recipe for years and it was my gateway salsa. I char the tomatoes and red jalapenos on the grill for a nice flavor.

I’ll second this website, I’ve used it for reference quite often. I’ll think, “I wonder if I can make… arbol-tomatillo salsa?” Then Google it, and that site comes up a lot. (You can pretty much make anything with any pepper either dried or fresh, any tomato or any tomatillo. It’s just a matter of knowing what ratios and other ingredients you want.)

I actually have some Smokey salsa in the freezer. I smoked the tomatoes, onions and serranos. Then blended and adjusted seasoning, no chipotle or anything….
