Nutria Rat Eggs
A good friend of mine who makes boudin and other types of sausages, and I were sitting around having a few beers and discussing different recipes to come up with and this is what we came up with. We took some boudin balls and wrapped them in green onion sausage, then grilled them over lump charcoal and glazed them with a homemade honey habanero sauce. We dubbed the Nutria Rat Eggs. Your Nutria eggs sound delicious, and I’m going to give them a try. But I will rename them to strictly Swamp Rat eggs. The one thing I despise the most in this world is a living Nutria, and normally I’m a live and let live kind of person.
"Their destructive feeding behavior has resulted in degradation and loss of thousands of acres of high quality wetlands in the Chesapeake Bay region. As of 2020, all known nutria populations have been removed from over a quarter million acres of the Delmarva Peninsula, and the Chesapeake Bay Nutria Eradication Project" is currently implementing efforts to verify total eradication.†And, no real surprise, they were introduced here in the 40’s by the federal government.
