My son just got back from a Scout fishing trip in the Keys. He brought back mackerel and mahi mahi. He wants the mackerel smoked so I was planning on using a bit of apple. The mahi I am going to cook on my cast iron skillet that has a small crack in it with a bit of oil and some blackening seasoning.
Anybody have better ideas? I don't have much experience cooking fish.

Let us know how it turns out, there is often whole mackerel at my super market and I haven't gotten around to Qing one yet, I would love to see how one goes.
