    crab cake question: when to freeze?

    I'm going to make the crab cake recipe for Mrs Mosca, for dinner tonight.

    It makes 6 cakes, and of course we are not going to eat 6 crab cakes.

    Should I: 1) form the patties, griddle two, and freeze four? (That would be my choice.) Or, 2) form the patties, griddle 6, and freeze four?

    I'd freeze them uncooked, preferably in vac bags.

    Depends on how long you will keep them frozen. Cooked crab cakes last longer frozen than raw ones. Uncooked appx 2-3 months, cooked appx 4-5 months

      Why not scale the recipe for 2 or 3?

        #2. Thats what we do, brown them off. Let them cool. Freeze. Then slack out and heat up in oven or on a slow griddle as needed. It also firms them up a bit

          I don't make many crab cakes myself, but my Mom would cook them first, then freeze them. I think the meat retains its texture better.
