Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

Thanks guys. I never know what the princess will lay out for dinner every day when I get home, hence why the yard bird got tossed on the coals alongside the shrimp. A buddy of mine called yesterday to check in and asked if I was strong enough yet to get back out on the water. 2017 can bite me FWIW, due to giving me the chest zipper and the shingles shortly after. I run a 14' ocean going fishing kayak (Wilderness Systems ATAK) but it has not been on the water this year because I don't yet have the chest or shoulder strength to fight the surf and chop in open water. So we decided that we would take his commercial rig out on labor day to find some blue water since the feds are going to release triggers and snapper that weekend. Last time we went, I caught some serious red grouper and a couple of kings. Anywho, that conversation put me in the mood for seafood so on the way home I swung by a local Marina to pay the Shrimp Lady a visit. It was late in the day and only one of their boats had come in, so I grabbed a couple pounds of 30's... I usually like to marinate them for a bit longer if they go in the smoke box because if you aren't careful they will dry out a bit, but yesterdays batch came out in the sweet spot of juicy and tender. I had some competition blend in the 680 and you could definitely taste the hickory fighting with the Old Bay to come through on the shrimp. I find placing them high in the exhaust and rotating the skewers every 10 minutes or so allows the smoke to permeate under the shells a bit and the heat is almost non-existent seeing as a Florida summer afternoon is approaching triple digits and the smoke box is logging just over that. After an hour or so, you toss them over on the indirect for a few minutes to set the flavor and you are in business. It definitely set the mood for me to pull out my fish baskets. Nothing like smoking a big hunk of grouper or kissing a nice flaky flounder before whipping up a batch of my East Bay Blue Crab stuffing. Carry on.

Weber Summit Kamado with SnS and Vortex.. Broil King Baron, Primo Oval Junior. Primo XL. Love grilling steaks, ribs, and chicken. Need to master smoked salmon. Absolutely love anything to do with baking bread. Favorite cool weather beer: Sam Adams Octoberfest Favorite warm weather beer: Yuengling Traditional Lager. All-time favorite drink: Single Malt Scotch
