    Tuna!

    Picked up some really great tuna at Costco on Friday.

    Dry brined with Szechuan pepper-salt a couple of hours ahead. HOT gas grill. Flip flip flip flip, two and a half minutes per side. I like my tuna RARE. Topped with a sweet soy glaze, and served with a side of green beans sautéed in bacon fat.

        I'm guessing with tuna you are merely heating the surface due to microbial issues. So if no microbes you could just eat straight from the pack?

        Very nice! Did you pick those up at the Maple Grove Costco? I have never been up to that one yet. I like going to the one down in Eden Prairie. Great meat department. The one in SLP is waaaay to crowded. I avoid that one like the plague.

          Spinaker yup. Although the MG Costco is getting pretty crowded as well. Also purchased a prime whole packer and 9 lbs of belly.

            Yeah, they are all getting like that. The EP one is larger so I don't notice as much.

          Nice tuna! It's one of my favorite seafood meats to cook on the grill. And yes, rare is how I like it too. Great cook!

            30 seconds on each side on a searing hot Lodge griddle with a bit of avocado oil. Mmmmm......good stuff.

                Just got off the ocean (southern Washington state) with some blue fin tuna...23 fish (slow day), I never cooked it on a BBQ before. I'm thinking olive oil, salt and pepper some lemon and rosemary. then sear it? Any suggestions?

                  Jon Edwards so do you like sushi? If you do, here's the plan. Your seasonings look good, I like a lot of black pepper, cracked fairly course. Get the grill HOT. You don't need much time on each side. More than a quarter inch cooked on each side is too much. In my opinion it should be raw in the middle. Make it a thick cut, an inch and a half minimum.

                    Thanks for this post. I've had really good grilled tuna and some eh, not so good. I haven't made it myself but now I'd like to try. Too bad you didn't get a pic of the inside. Maybe next time!

                      Mudkat if you are looking at the outside of an uncooked tuna steak, that's the inside. Only question is how far in the cook goes. 😊

                        That's the way I like it. I'm gonna have to look for some good tuna. They have frozen Mahi Mahi here. What do you get at Costco? JCGrill

                      tuna is fantastic so many ways. that is a new one for me, and Ill try it after my next fishing trip. I like with a lot of pepper, a bit of fish sauce and soy to adhere the pepper to it, and seared just like that. raw on the inside, charrd on the outside.

                        I don't dry brine tuna. It's only seared very hot and very quickly. No need to dry brine.
