While on vacation in Amsterdam a few weeks back I came across someone smoking some Herring in a park just outside the city. I've never smoked fish before, and have limited experience eating it (I'm a late bloomer?). After seeing and tasting this I really need to get started. The fish was resting on a wooden rack, and then moved to a simple barrel smoker over low heat. I'm not sure what kind of wood was being used, but it tasted great. I never thought I would like smoked fish, but wow it was great!
