Any tips for pellet grill smoking scallops at 225 F ???

For what it's worth. I took your question as an opportunity. I cook with a WSCGC, by the way.
I wrapped fresh scallops in a half strip of bacon, skewered them, placed them on a Frogmat next to a brisket that I am currently working on. Cooker temp stayed right at about 234 degrees. They were on for an hour.
I checked them with my Thermapen Mk4. Internal temp of scallops were about 155 degrees, bacon nicely browned.
Nice smokiness, very moist but done perfectly. Only thing that I might do differently would be to use some sort of light, non-salt marinade prior to cooking.
