I want to grill some BFT steaks today for wife and neighbors. On my last tuna trip I heard several people talking about marinating and grilling in Japanese BBQ sauce. Though I have never had Japanese BBQ sauce I did buy some. It sounds good at face value but.... most grilled tuna recipes say to grill over high heat. This BBQ sauce contains sugar. Sugar burns over high heat. Wouldn't grilling tuna marinated in this sauce result in burned sauce and poor flavor?
On the other hand, would it be a better idea to marinate in a combo of soy sauce, olive oil, garlic, black pepper and lemon juice? Gill quickly over high heat, then glaze with sauce and place on a cooler part of grill to tack up the sauce (i.e. caramelize)?
I am also wondering if the flavor would benefit from cooking aver a wood fire in seats of charcoal, or adding a couple pieces of wood for a hint of smoke flavor.
I'd love to hear about your thoughts, opinions and suggestions please.
