Salmon Species - what is preferred?

    I’m a sockeye guy if available but any salmon that is fresh is enjoyable. A local native Indian band used to come around to the pub selling smoked salmon strips. It was incredible. They told me that they used chum (keta) salmon as it was the best for smoking. I can’t ever recall seeing chum for sale anywhere.

      King is best IMO, followed by wild Scottish salmon. Sockeye/Red are great for curing and smoking due to the high fat content and stronger flavor that can stand up and not get lost in the process.

        I prefer sockeye over all the others. I'll stock up on the Copper River stuff when Costco has it.

            I go with wild caught at Costco....smoke it all the time for SWMBO, no where near my favorite but others seem to really like it

            I used to hate salmon. I'd buy "fresh" filets and they tasted really fishy.

            Then, I went in a Lake Michigan salmon trip one year and came back with 40 pounds. Gave away a bunch of it.

            My buddy sent me this recipe for Tequila Salmon and it was fantastic. Even my picky kids loved it.

            Here is the recipe.
            The optimum marinade time I've found is about an hour and a half.

            1/3 cup orange juice (fresh squeezed is best)
            3 tablespoons extra virgin olive Oil
            3 tablespoons tequila
            1 tablespoon chopped fresh cilantro
            2 jalapenos with seeds
            1 teaspoon minced garlic (from the jar)
            1 teaspoon kosher salt
            1 teaspoon ground cumin

            Grill at 375 degree flesh side down 5 to 7 minutes or until it doesn't stick

            Flip to skin side for 2 to 3 minutes
