I’m a sockeye guy if available but any salmon that is fresh is enjoyable. A local native Indian band used to come around to the pub selling smoked salmon strips. It was incredible. They told me that they used chum (keta) salmon as it was the best for smoking. I can’t ever recall seeing chum for sale anywhere.

I used to hate salmon. I'd buy "fresh" filets and they tasted really fishy.
Then, I went in a Lake Michigan salmon trip one year and came back with 40 pounds. Gave away a bunch of it.
My buddy sent me this recipe for Tequila Salmon and it was fantastic. Even my picky kids loved it.
Here is the recipe.
The optimum marinade time I've found is about an hour and a half.
1/3 cup orange juice (fresh squeezed is best)
3 tablespoons extra virgin olive Oil
3 tablespoons tequila
1 tablespoon chopped fresh cilantro
2 jalapenos with seeds
1 teaspoon minced garlic (from the jar)
1 teaspoon kosher salt
1 teaspoon ground cumin
Grill at 375 degree flesh side down 5 to 7 minutes or until it doesn't stick
Flip to skin side for 2 to 3 minutes
