I have some catfish in the freezer that needs to be cook. Anyone have a good catfish batter recipe that you don't mind sharing?

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

This is an Emeril Lagasse recipe and I've used it for years! It's good for shrimp too.
Cut catfish into desired piece size. Mix up buttermilk and hot sauce (I like Louisiana Hot Sauce) until the buttermilk is pink. Soak up to 30 minutes. On a piece of waxed paper pour a pile of Zatarain's unseasoned fish fry and sprinkle generously with your favorite Cajun seasoning (I'm partial to Bon CaCa out of New Iberia, but Tony's works). Mix seasoning into fish fry. Roll catfish in fish fry. Do all the breading while your deep fry oil (peanut for me, always) gets hot. Drop catfish in hot oil. MONITOR this closely! Pull out of oil when done.
Homemade Tartar Sauce
Finely chopped sweet onion
finely chopped sweet gerkins (not pickle relish)
Mayo
Mix and serve with fried catfish or shrimp.
Cocktail Sauce (this is actually my favorite for fried catfish too)
Heinz Ketchup
Prepared horseradish
splash of Worchestershire
Mix and adjust to taste.
Don't forget Lemon!
