theroc I ventured out to SM Farmers Market today. They had a space there! Picked up White Leg King Prawns. 🦐
debating on how to prepare them. I took a frozen bag because I did not anticipate grabbing perishable products.
Steve, the owner, (I think that’s his name) said he is going to start doing tours of the facility. Should be really cool.
SheilaAnn - we took their tour two weeks ago. Very interesting and informative. Their prawns are awesome. We just wish there was pick-up available up our way. Downey, Santa Monica, or Long Beach are a bit too far to go regularly.
I'd suggest a quick grill or stir fry for your first taste. The heads are the bomb.

Freaking delicious! so clean, so fresh. I saved the heads and shells for stock at a later time. I did sauté off two to taste as you suggested theroc then I made shrimp and grits (bacon, tomato, garlic, scallions, grits with butter and cheese). Because shrimp and grits. And I added spinach.
Awesome. That looks fantastic and can only imagine how it tasted. We also make a really tasty and simple pasta with their prawns. One of the secrets of the dish is to boil the shells and heads in the water before cooking the pasta. That extra infusion of the prawn flavor into the noodles sends it over the top.
