My husband won a guided fishing trip over in Orofino, ID on the Clearwater River so we took a road trip this past week for it (about 7-8 hour drive). We caught one steelhead and a couple got away. Cooked up a couple pieces tonight for dinner. Mine and hubby’s was blackened and I put lemon dill seasoning on kids to try. He’s not a fish fan but I requested him to at least try it knowing I would end up eating it.
It was super cold out there on the water, was 19° when we started out and were in shade all day, don’t think it ever broke above freezing all day.
Anyway, plan to smoke the rest probably or at least most of it. Ideas on smoking recipes appreciated.
