    Shrimp And Crab Stuffed Flounder With Lobster Gravy

    [ATTACH=CONFIG]n105856[/ATTACH] This recipe is from BBQ Pit Boys. We served it last night when our son and daughter-in-law came over for dinner. We also had garlic bread, Caesar salad with shrimp and crab meat, and rose wine. Dessert was key lime pie.

    Shrimp & Crab Stuffing

    Chop 2 stalks celery
    Chop ½ cup red bell pepper
    Put bell pepper and celery in a bowl
    Melt 1 stick (1/4 pound) of butter in a sauce pan
    Chop the pre-cooked deveined shrimp into 1 cup of chopped shrimp and put it into the bowl with the bell pepper and celery
    Add melted butter to the bowl with the bell pepper, celery and shrimp
    Add 1 cup bread crumbs to the bowl and mix it in
    Add ¼ cup white wine
    Add ½ pound of lump crab meat
    Mix it all together in the bowl
    Sprinkle with 1 TSP S-P-G (consists of 1 TBS Kosher salt, 2 TBS coarse-ground black pepper, 1 TBS granulated garlic, and 1 TBS paprika)
    Add 8 oz. cup sour cream
    Mix together well
    Add 1 TSP hot pepper sauce
    Grate 4 – 5 oz. Pecorino cheese onto mixture
    Mix ingredients in bowl thoroughly and put it in the refrigerator

    Lobster Gravy
    Chop 1 stalk celery and 1 shallot
    Chop 1 stalk green onion
    Mince 1 clove of garlic
    Melt 1 stick (1/4 pound) butter in a sauce pan
    Put the chopped celery, shallot and minced garlic in the sauce pan with the melted butter
    Stir and cook them down
    Add S-P-G
    3 cups clam stock
    2 cups heavy cream
    2 TBS corn starch
    2 TBS tomato paste
    1 TBS Woostershire sauce
    ½ TSP cayenne pepper
    Stir slowly until thoroughly mixed
    Chop up 4 - 6 oz. lobster meat fine
    Put lobster in pot which should be simmering and bubbling slowly
    Add 1.5 - 2 oz. of Bourbon
    Sprinkle on paprika
    After 10-15 minutes of low simmer, take off of stove.

    Stuffed Fillets

    Cut 2 lemons in half
    Squeeze lemon over first flounder fillet, put stuffing from bowl on top of fish fillet, and roll the fillet up over the stuffing
    Prepare each of the 6 fish fillets like this
    Place the 6 fillets in a dry 12” black iron pan
    Cut one of the left-over lemons into 8 wedges and put these in the center of the pan with the stuffed fillets
    Pour the lobster gravy evenly over the fillets to about an inch from the top of the pan
    Sprinkle on some paprika
    Cook on indirect heat on grill or in oven at 350 degrees F for about 45 minutes. Dish should be bubbling for the last 10-15 minutes that it cooks
    Remove and let rest for 15 minutes
    In serving, ladle lobster gravy from the pan over each fillet
