Also I know I cannot spell
I am going with the below recipe, and it is currently in brine in a cooler.

I am going to cook at 225, so I am giving it 8-10hrs.
As for brining, I picked up one of these bags https://www.usplastic.com/catalog/it...x?itemid=35234, and I am pretty happy with it. I only have a foam cooler of marginal quality, so this is an extra layer of safety and thick enough to be reusable.
