      I am going with the below recipe, and it is currently in brine in a cooler.

      I am going to cook at 225, so I am giving it 8-10hrs.

      As for brining, I picked up one of these bags https://www.usplastic.com/catalog/it...x?itemid=35234, and I am pretty happy with it. I only have a foam cooler of marginal quality, so this is an extra layer of safety and thick enough to be reusable.

      So, it took about 6 hrs at 225, and it was a crowd-pleaser. Honest review; it was really good, something different and cool looking. Would I spend the money on another one - no, but I am happy it did it Also, jowl meat was the best.
