I wanted to do kind of a riff on Asian ribs. There are some great recipes on this site, but I didn't want to marinade, I just wanted to rub. Here's what I came up with.
1/4 cup smoked paprika
1/4 cup brown sugar
1 1/2 tablespoons hot dry mustard
1 tablespoon ground ginger
1 tablespoon ground star anise
1 1/2 teaspoons ground allspice
1 1/2 teaspoons garlic powder
1 1/2 teaspoons​​​​​ ground black pepper
1 1/2 teaspoons cinnamon
This should be enough for a couple of racks. Obviously no salt, because I dry brined, and I expect you would too. I would love it if you tried it and gave me your opinion.
BBQ_Steve-O you and I are on the same page. I don't mind five spice, but clove is not what I was going for here. Fennel to me isn't a lot different than anise, didn't feel like I needed both.
