I have some marinades that involve lemon juice that I've tried to turn into salt-less rubs per Meathead. Lemon zest, etc, just doesn't given the same intensity of flavor. Casting around on Amazon, I came across "True Lemon," which appeared to be actual dehydrated lemon powder. I ordered some up, tried it, and have been very pleased. 
Here's a rub recipe for chicken I'll be trying this evening:
Garlic, Lemon, & Rosemary Rub
¼ cup dried rosemary, powdered
¼ cup garlic powder
1 Tbsp lemon powder
1 Tbsp black pepper
1 Tbsp dried thyme, powdered
15 packets True Lemon equals about 1 Tbsp.
Warning: Tonight will be the first time I've actually tried this version, though I've done a variation with twice the lemon powder, which was too lemony.
Finally, I somehow got a second box of 500 packets, which we hadn't ordered, and Amazon just said, "Keep it, no charge." It'll take me years to get through all that, so . . .
