    Lemon Powder for Rubs

    I have some marinades that involve lemon juice that I've tried to turn into salt-less rubs per Meathead. Lemon zest, etc, just doesn't given the same intensity of flavor. Casting around on Amazon, I came across "True Lemon," which appeared to be actual dehydrated lemon powder. I ordered some up, tried it, and have been very pleased. Click image for larger version

    Here's a rub recipe for chicken I'll be trying this evening:

    Garlic, Lemon, & Rosemary Rub
    ¼ cup dried rosemary, powdered
    ¼ cup garlic powder
    1 Tbsp lemon powder
    1 Tbsp black pepper
    1 Tbsp dried thyme, powdered

    15 packets True Lemon equals about 1 Tbsp.

    Warning: Tonight will be the first time I've actually tried this version, though I've done a variation with twice the lemon powder, which was too lemony.

    Finally, I somehow got a second box of 500 packets, which we hadn't ordered, and Amazon just said, "Keep it, no charge." It'll take me years to get through all that, so . . .

      Generally speaking I just use fresh lemon juice on fish and sometime poultry. That's not a bad option though. If you want to ship that extra 500 packets to me, I'll make use of them !!!

                Good grief! Don't say that to my family - they already think I'm a BBQ stand!

              It will be interesting to find out how that rub recipe tastes, we use lemon pepper on everything at my crib.

                  The rub came out very well, the family, grandkids included, said great things about the chicken. I cooked it indirect on a 27" Weber wit the Slow'n Sear, and it came out really nicely!

                  I'm not sure the thyme was really needed - I was thinking it might be a balance to the intensity of the other ingredients. As it was, I could hardly taste it. I'm afraid what ever the thyme gained last night will be lost to Daylight Savings Thyme tonight.

                    Okay, the sample envelopes have been mailed out to all who requested them. I'm hoping Homeland Security doesn't arrest me for mailing a strange powder through the US Postal system! If they do, someone please bring me barbecue in the federal prison!

                      I use that stuff when in a pinch, grampa , like when I need a squeeze of lemon in a sauce before serving and my last lemon looks like a biology experiment in the crisper drawer.

                      It's available at my grocery in lemon and also lime powder. Hadn't thought to try them in a rub. Thanks for the tip!

                        The odd thing is that we actually have a very productive lemon tree in our yard, and are never without more lemons than any three families could use!

                      Well, they didn't throw me into prison, but they returned most of the envelopes, and want $2.50 to 3.50 each as a "package". Sorry, folks, but that ain't happening!
