    Barrister DEW's Rib and Butt Rub

    3/4 Cup Paprika
    1/4 Cup Ground Black Pepper
    1/2 Cup packed Brown Sugar
    2 Tablespoons salt-free Chili Powder (I use home-made)
    2 Tablespoons Garlic Powder
    2 Taplespoons Onion Powder
    1 teaspoon Cayenne or Chipotle Powder
    2 Tablespoons ground Cumin Seeds
    1/2 Tablespoon Thyme
    2 tsp dried Lemon Peel or Zest
    1 Tablespoon Oregano

      I was wondering Dew, do you think you could replace the cayenne/chipotle with Ancho peppers? My thought was that they are a bit sweeter but just as smoky as chipotle peppers. Might go well on the pork butts. I'm gonna give that a try. Thanks.

        It already has chili powder in it which is largely ancho with a few other chilis, garlic and oregano added. I don't find ancho to be smoky like chipotle. Ancho is merely dried poblano pepper. Chipotles are actually smoke dried jalapenos. I use the cayenne or chipotle for some additional heat. I suppose you could leave it out, though.
