    Marinade and seasoning suggestions wanted

    Hey all. I got myself a 2lb waygu skirt steak from SRF and am looking for a marinade for this puppy.

    I also have a 2lb Tri Tip. Also from SRF. Which I have never owned one before. Cain’t find them around my parts. I’m in search of a seasoning for this bad boy as well. BBBR???

    Thanks for any and all suggestions.

    Honestly my favorite with skirt steak is just salt and pepper. I've maybe cooked 7 tri tips - all a la Meathead - so I've got nothing for you there.

      Try a Santa Maria style rub for the tri tip. It one of my favorite rubs! This is what i use from another site I frequent.

      Santa Maria steak seasoning:
      5 Tbs. kosher salt
      2 Tbs. fresh-ground coarse black pepper
      2 Tbs. granulated garlic
      2 Tbs. dried parsley, rubbed in hands to grind finer
      4 Tsp. demerara sugar

      Coat cold meat with olive oil, and sprinkle steak seasoning on just before smoking. Cook to preferred doneness, I go to 128* or so using 225. Reverse sear and serve. The sweetness the sugar provides is perfect, not to sweet though.

        Yup, Can't beat Santa Maria Seasoning. I love what Oak Ridge has put together. I always keep this on hand.
