Here's some rubs. I've only tried the last one and substituted 5 Spice Powder for Anise pods. ( You'll have to look this up for the correct amount - not much! ). Did (2) 1 1/4" strips (yo!) , but get this... the other nite I did (2) 1/2" thin steaks Meathead style. Off the gasser in about 5+ minutes, then covered with butter... OMG!
All recipes make about 1/3 cup
Recipes with whole peppercorns: Grind until no whole pepper corns remain
Chile-Cumin Spice Rub
• 3 dried chipotle chiles, stemmed, seeded, and cut into rough pieces
• 2 dried ancho chiles, stemmed, seeded, and torn into rough pieces
• 1 tablespoon ground cumin
• 1 tablespoon table salt
• 2 teaspoons granulated sugar
Instructions:
1. Grind chiles in dedicated spice grinder until powdery. Whisk together ground chiles and remaining ingredients in small bowl until combined.
Cocoa-Cumin-Allspice Rub
• 1 tablespoon unsweetened cocoa
• 4 teaspoons ground cumin
• 2 teaspoons ground allspice
• 4 teaspoons black peppercorns
• 2 teaspoons table salt
Tarragon-Mustard Seed Rub
• 3 tablespoons dried tarragon
• 2 tablespoons yellow mustard seeds
• 2 1/4 teaspoons black peppercorns
• 1 tablespoon table salt
Peppery Coriander and Dill Spice Rub
• 2 tablespoons black peppercorns
• 2 tablespoons coriander seeds
• 1 tablespoon dill seed
• 1 1/2 teaspoons red pepper flakes
• 2 1/2 teaspoons table salt
Star Anise and Coffee Bean Spice Rub
• 6 star anise (pods)
• 2 tablespoons whole coffee beans
• 1 tablespoon black peppercorns
• 2 teaspoons table salt
• 1 teaspoon granulated sugar
