just returned from a trip to Jamaica. My niece got married there and it was just great. I was bent on trying auhtentic jerk chicken and pork. I am so happy I got to taste this wonderful spice concoction. Some of the deepest flavor I have ever experienced. Grilled on wood and just as juicy as can be. Does anyone have a jerk rub recipe?

While the title of your post is a little misleading and maybe somewhat disappointing.... lol... jk..... I enjoyed the post...
I would love to have the $ and time to travel to different places around the world and spend time learning and studying their mastery and different techniques of cooking on open flame, smoking, etc and to learn a little about their culture of cooking.
