    Jamaican Curry Powder

    Ingredients 1/4 cup whole coriander seeds
    2 tablespoons whole cumin seeds
    2 tablespoons whole mustard seeds
    2 tablespoons whole anise seeds
    1 tablespoon whole fenugreek seeds
    1 tablespoon whole allspice berries
    5 tablespoons ground turmeric
    OPTIONAL: To make hot curry powder, add 1 Tablespoon cayenne pepper.
    Directions 1. Combine the coriander seeds, cumin seeds, mustard seeds, anise seeds, fenugreek seeds, and allspice berries in a skillet. Toast over medium heat until the color of the spices slightly darkens, and the spices are very fragrant, about 10 minutes. Remove the spices from the skillet, and allow to cool to room temperature. Grind the spices with the turmeric in a spice grinder. Store in an airtight container at room temperature.

      Yes I'm curious about this to since I have a load of jerk chicken on and I love Jamaican food!

        Looks good. I love jerk chicken. I even have pimento wood to smoke it with. Do you make your own jerk marinade or use a commercial one? If commercial, which one?

      I use it in Jamaican curry goat, for which I posted a recipe on here which links to this recipe, and Jamaican curry chicken. It is also used as an ingredient in the dough for West Indian "patties" which are a kind of empanada or baked dumpling. Also for curried potatoes.

      Jerk is mainly allspice and heat and it's pretty different from this.

        This really looks great Dewesq55. I will be trying this in curry, bbq chicken, and maybe ribs. It looks like it has great potential.

          I found this recipe a few years ago and it tastes about as authentic as any I've tried before. The nice thing is it easily tweaked for any occasion, smoking hot for the boys on Packer Sunday's and toned down so Mom can eat it with her rum punch on a hot summer day or whatever your preferences may be. Pimento wood is really good but if you don't have it available cherry also works well.

            Pimento wood is available from a US vendor by mail order. That's where I get it. I highly recommend it as it gives a really authentic flavor.

              Anxious to pick me up some pimento wood. I decided I don't care for allspice at all, and therefore genuine "jerk" seasoning (as I understand it to be), but I like trying new woods.
