Once I use up the SPOGOS I have, I will be buying a few things to replicate, minus dried leaks….that is expensive! But I have found dried mushroom powder and from there I think it will be close enough.
I’ve also tried another coffee style rub, similar to carne crosta, but I don’t recall the brand. I’ll see I I can find that and post back. Fortunately, I have a stock on these both…the one I don’t have, Black Ops
which was m favorite!

Coffee rub Here's my recipe;
1 Tbs. finely ground espresso coffee beans
1 Tbs. pure ancho Chile powder
1 tsp. natural cocoa powder
1 tsp. granulated garlic
1/2 tsp. ground cumin
1/2 tsp. brown sugar
1/2 tsp. ground fennel seed
1/8 tsp. ground allspice
4 tsp. kosher salt
2 tsp. freshly ground black pepper
