It is unclear what type of beef ribs you are asking about. Chuck Short Ribs? Back ribs? Actually, regardless of type, I do not think they need injection. After thawing, dry brine overnight. Apply non-salt rub of choice (Mrs. O'Leary's from the free side of AmazingRibs works great), then smoke them between 250*-275*. I have never wrapped Short Ribs, but if you are worried about moisture and tenderness, wrapping after the stall works fine. Cook to probe tender, somewhere between 190*-205*.
