I seemed to over-season the last brisket.
In review, I used garlic powder, and I should have used granulated garlic.
1 TBS of Garlic power is not the same as 1 TBS of Granulated Garlic.
Read the labels before use I should. LOL

If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I've always used granulated garlic interchangeably with powdered garlic. Actually, the past year or two, I just buy granulated garlic and onion, as I got tired of garlic and onion powder clumping up in the bottle, and find that the granulated versions don't clump up like that. Had no idea there was a doubling in strength going from granulated to powder.
So if anything, I guess I've been using less garlic than I thought. Probably would have noticed it much more if I had gone the opposite direction, like you did!
I've always assumed that granulated garlic is to garlic powder as kosher salt is to table salt, based on the larger size of the particles. Never really tested it, though.

I just found a several conversions for garlic online that all seem to point to these conversions, which I find useful to know.
1 Clove of Garlic Equals
1/2 teaspoon minced garlic
1/8 teaspoon garlic powder
1/2 teaspoon garlic flakes
1/4 teaspoon granulated garlic
1/2 teaspoon garlic salt, which also adds 3/8 teaspoon salt
Those conversions are useful, as there are times I don't have fresh garlic, but may have garlic salt or granulated on hand. I've personally never seen garlic flakes, but am sure they are for sale - just not ever present in our pantry.
I am a lazy cook, and my wife is NOT a garlic person, so we rarely if ever buy fresh garlic cloves, but I keep a jar of minced garlic in the fridge, and use that for all recipes that call for fresh garlic. So I already knew that 1/2 tsp equivalent per clove. I didn't know it for powdered or granulated thought, so this is all new information for me.
