    Sounds and looks great. I love Indian food but tend to focus on southern Indian/vegetarian dishes when making Indian food and haven’t yet tried to merge it with ribs but you got me thinking!

      JCBBQ - jealous. Not a ton of great (or even passable) here. I used to live around Curry Hill in NYC (Lex between 25th and 28th) so had my fair share of dosas, thali, daal and the like and wish I could pop around the corner for that like I used to.

    I love this cook. 100% gonna do it this weekend at least in indian style, will probably play around with what spices i have on hand. Sounds and looks amazing. Probably something revolving around garam masala, ginger, and maybe a touch of cinnamon.

      fzxdoc i will do my best but i do so much writing and content creating for my job that its usually the last thing i want to do when im not on the clock as it were. However, for whatever reason this cook really fired up my inspiration so i will try.

    Have you tried that rub on anything else? I am wondering about lamb ribs or shoulder..

      I probably wouldn’t use it on lamb bc of the sugar. I have a good rub for lamb shawarma cooking a whole leg of lamb. I bet there are good Indian spice combos w/o sugar for lamb. Hmmm now you’ve got me thinking 😄

      Wait! What am I thinking! Yes I have used this on pulled lamb and it’s amazing. All the rub ingredients except the sugar. Also add an equivalent amount of salt as the garam masala. Pulled the lamb and sprinkled it on and mixed it in. Fantastic

    Those ribs look really good! I have been playing with Indian cuisine for over a year now. Thanks for posting your rub recipe and I look forward to the sauce recipe as well. I might try using jaggery in the rub but it is more expensive than white and brown sugar.

      Heres the chutney recipe. It’s fantastic. I tried to make it a sauce by only cooking 30 mins. Definitely more flavor cooked down the full hour. That said, it was very good. Add this habanero to taste for heat. Pairs well.

        fzxdoc I did 3X the recipe. Overkill for sure. Biggest pita is sieving the tamarind and dates. I pleaded it up to make it less chunky but I wonder if there is a tool that exists to do the job of pushing through a sieve.

        JCBBQ , I guess I'd use a chinoise for that, but it would still be a lot of work, I'm guessing. Maybe start with the seedless tamarind product instead?

          JCBBQ fzxdoc Im just going to piggy back on this thread. My daughter woke me up early this morning so its going to be ribs for lunch instead of dinner, lol. I did zero research and decided just to throw some stuff together for the rub as follows:

          1 tbsp garam masala
          1 tsp ginger
          1 tsp tumeric
          1/4 tsp chili poweder (ancho)
          1/8 tsp korintje cinnamon

          Ribs salted, rubbed, then dusted with black pepper. Ribs were a rack from wild fork. So its not really indian per say but it should be interesting

            Appreciate it but its a crap shoot, lol. I rarely do my own rubs because its just one more thing i would become obsessive over and i really dont have time for that. So i know what flavors i like together but ratios are just eyeball and gut feel. So its very possible im way off here. We shall see, lol. I did measure these out so if it works at least its a set number i can do again.

          Well they are looking good so far. Not planning on saucing as i almost never do that with ribs.

          OK. So, the cook itself was a success. Ribs were exactly how i would want ribs. Touch of bite but very tender. I definitely screwed up the rub. I think the addition of the cinnamon was a mistake. I thought i added not too much but it was the predominant flavor and just a little weird tasting, not bad, just weird and completely not what i had in my head. Would i do this again and tweak, for sure. But definitely would not recommend anyone tries the rub i posted above, lol.

            I usually throw a cinnamon stick in butter chicken which was the inspiration but in a rub it was just too much. Maybe add less or just not add at all.
